    ew this isn’t mapo tofu. YOU USED FIRM TOFU AND CHICKEN! Seriously, if you’re gonna take all the fat and flavour from a traditional recipe, don’t call it by its traditional name.

    I agree, everything else is okay, even without the Sichuan peppercorn, but why chicken? Are you making Mapo TOFU or Mapo CHICKEN? Come on! The only meat i have seen cooked with Mapo Tofu is corned meat, not chicken, nobody does that.

    Without Sichuan peppercorn, there is no Mapo tofu. The way you cooked is called Macfadden tofu.

    If you want to see the traditional Chinese chemical reaction (calcium sulfate) for Tofu, check out the video I uploaded, which sticks to the original recipe as much as possible with the things I actually own and had available to me.

    caucasian? not at all. i’m elated at the idea of people learning more about cooking and culture. but cooking is a craft that we owe to centuries of trial and error. “respect the old, search for the new”. mapo tofu must have szechuan peppercorn. the tofu must be soft. chicken is never used. usually pork or beef. there are other critiques but those are the biggest ones. i didn’t mean to be rude, but in the osmosis of cultures i’m just doing what i can to make sure chinese cooking isn’t faded out.
