I assume that the fast will end at some time soon. So if you return to normal eating, don’t worry about it. Good dietary sources include egg yolks and a lot of meats.
If you were intending to stay on the fast for weeks and weeks, then you might need all kinds of supplements to stay out of the hospital. But you sound like you are a very normal person with good sense and will be working in some other foods soon.
It might be interesting for you to add one food a day. This would allow you to see if any particular foods that you eat are bringing on the symptoms you mentioned.
Choline deficiency is not likely to be a long term chronic condition unless you have a genetic disorder involving it or eat a strictly vegan diet.
